Una d\u2019aquestes innovacions \u00e9s l\u2019\u00fas de <strong>nanopart\u00edcules<\/strong> en els materials d\u2019envasament. Es tracta de part\u00edcules extremadament petites \u2014milions de vegades m\u00e9s petites que un gra de sal\u2014 que poden aportar propietats molt \u00fatils als envasos. Entre les m\u00e9s utilitzades hi trobem el <strong>di\u00f2xid de titani (TiO2)<\/strong> i l\u2019<strong>\u00f2xid de zinc (ZnO)<\/strong>. Tot i els avantatges que poden oferir, l\u2019\u00fas d\u2019aquests materials genera tamb\u00e9 preocupaci\u00f3 i debat. Ens hem de preguntar: aquestes nanopart\u00edcules poden passar del pl\u00e0stic a l\u2019aliment? Actuen com a <strong>barrera<\/strong> contra la llum, la calor o la humitat, cosa que ajuda a conservar millor els aliments. Tamb\u00e9 tenen <strong>efectes antimicrobians<\/strong>, \u00e9s a dir, poden reduir la pres\u00e8ncia de bacteris i fongs a l\u2019interior de l\u2019env\u00e0s. A m\u00e9s, poden contribuir a millorar la <strong>resist\u00e8ncia del material<\/strong> i a reduir-ne el pes.<\/p>\n<p>A m\u00e9s, aquests envasos poden formar part dels anomenats <strong>envasos &#8220;actius&#8221;<\/strong>, que no nom\u00e9s contenen l\u2019aliment, sin\u00f3 que el protegeixen activament. Aix\u00f2 pot ajudar a reduir l\u2019\u00fas de conservants qu\u00edmics i a disminuir el malbaratament alimentari, ja que els productes duren m\u00e9s temps en bon estat.<\/p>\n<blockquote><p>Cal m\u00e9s recerca per entendre com es comporten aquestes subst\u00e0ncies dins del cos hum\u00e0<\/p><\/blockquote>\n<h2>Poden passar als aliments?<\/h2>\n<p>Aquesta \u00e9s la gran pregunta que preocupa tant a investigadors com a autoritats sanit\u00e0ries. En teoria, els materials utilitzats per envasar aliments han d\u2019estar dissenyats perqu\u00e8 <strong>no deixin anar subst\u00e0ncies perilloses<\/strong>. Per\u00f2 quan es treballa amb nanopart\u00edcules, les coses es tornen m\u00e9s complicades. Els estudis fets fins ara indiquen que s\u00ed que <strong>pot haver-hi una certa migraci\u00f3<\/strong> d\u2019aquestes nanopart\u00edcules cap als aliments, especialment si es tracta de productes calents, \u00e0cids o grassos, o si el contacte \u00e9s molt prolongat. Tanmateix, la quantitat que pot migrar \u00e9s molt petita, i encara hi ha<strong> molts dubtes sobre si aquestes part\u00edcules arriben als aliments mantenint la seva forma tan petita o si canvien abans de fer-ho<\/strong>.<\/p>\n<p>Per si aix\u00f2 fos poc, mesurar aquestes nanopart\u00edcules dins dels aliments \u00e9s molt complicat, i els estudis que existeixen sovint donen resultats diferents. El que s\u00ed que \u00e9s clar \u00e9s que <strong>cal m\u00e9s recerca per entendre com es comporten aquestes subst\u00e0ncies dins del cos hum\u00e0<\/strong>.<\/p>\n<h3>S\u00f3n segures per a la salut?<\/h3>\n<p>Pel que fa als possibles efectes sobre la salut, les opinions dins la comunitat cient\u00edfica estan dividides. En alguns estudis, s\u2019ha observat que el<strong> TiO2 i el ZnO poden provocar dany cel\u00b7lular, inflamaci\u00f3 o estr\u00e8s oxidatiu<\/strong> (un desequilibri en les c\u00e8l\u00b7lules que pot afavorir malalties). Altres estudis, per\u00f2, indiquen que <strong>a les dosis habituals, la toxicitat \u00e9s molt baixa<\/strong> i no suposa un risc greu per a la salut. Una preocupaci\u00f3 addicional \u00e9s que, degut a la seva mida tan petita,<strong> les nanopart\u00edcules poden travessar barreres naturals del cos<\/strong>, com la paret intestinal, i arribar a \u00f2rgans on altres subst\u00e0ncies no arribarien. Tanmateix, la legislaci\u00f3 espec\u00edfica sobre l\u2019\u00fas de nanopart\u00edcules en envasos encara no est\u00e0 del tot desenvolupada.<\/p>\n<p>Pel que fa al TiO2 , l\u2019Autoritat Europea de Seguretat Aliment\u00e0ria (EFSA) va anunciar l\u2019any 2022 que <strong>ja no el considera segur com a additiu alimentari<\/strong>, perqu\u00e8 no es pot descartar que pugui provocar danys gen\u00e8tics. Aix\u00f2 no vol dir que s\u2019hagi prohibit en envasos, per\u00f2 s\u00ed que ha enc\u00e8s les alarmes. El ZnO encara est\u00e0 autoritzat com a additiu i en materials d\u2019envasament, per\u00f2 sempre <strong>sota control i segons les condicions d\u2019\u00fas<\/strong>.<\/p>\n<p>Un altre tema controvertit \u00e9s que, en molts casos, <strong>el consumidor no sap si un env\u00e0s cont\u00e9 nanomaterials<\/strong>, perqu\u00e8 no sempre s\u2019indica a l\u2019etiqueta.<\/p>\n<blockquote><p>En molts casos, el consumidor no sap si un env\u00e0s cont\u00e9 nanomaterials<\/p><\/blockquote>\n<h3>I qu\u00e8 passa amb els aliments ecol\u00f2gics?<\/h3>\n<p>En l\u2019\u00e0mbit de l\u2019alimentaci\u00f3 ecol\u00f2gica, <strong>l\u2019\u00fas de nanopart\u00edcules est\u00e0 expressament prohibit<\/strong>. Segons la normativa europea, no es poden fer servir nanomaterials enginyeritzats ni en la producci\u00f3 ni en l\u2019envasament d\u2019aliments ecol\u00f2gics. El motiu \u00e9s e<strong>l principi de precauci\u00f3<\/strong>, ja que encara no se sap del tot si aquests materials s\u00f3n segurs a llarg termini.<\/p>\n<p>Els productes ecol\u00f2gics es basen en valors com la <strong>naturalitat<\/strong>, la <strong>transpar\u00e8ncia<\/strong> i la <strong>sostenibilitat<\/strong>, i l\u2019\u00fas de tecnologies molt noves i poc conegudes pot anar en contra d\u2019aquests principis. Ara b\u00e9, la investigaci\u00f3 en aquest camp no s\u2019atura, i ja s\u2019estan estudiant <strong>alternatives m\u00e9s naturals i biodegradables<\/strong> que podrien ser acceptables en el futur.<\/p>\n<h3>Prud\u00e8ncia i regulaci\u00f3<\/h3>\n<p>Les nanopart\u00edcules de TiO2 i ZnO poden aportar beneficis interessants a l\u2019envasament alimentari, com millorar la conservaci\u00f3 dels aliments i reduir el malbaratament. Per\u00f2 tamb\u00e9 plantegen<strong> dubtes importants sobre la seva seguretat<\/strong>, especialment pel risc que puguin passar als aliments i afectar la salut de les persones. La ci\u00e8ncia encara no t\u00e9 totes les respostes, i per aix\u00f2 molts experts demanen <strong>prud\u00e8ncia, m\u00e9s recerca i una millor regulaci\u00f3<\/strong>.
