{"id":3552,"date":"2014-10-16T16:11:00","date_gmt":"2014-10-16T16:11:00","guid":{"rendered":"https:\/\/www.bioecoactual.com\/2014\/10\/16\/les-diferencies-significatives-entre-els-aliments-organics-i-no-organics\/"},"modified":"2025-06-16T08:59:13","modified_gmt":"2025-06-16T06:59:13","slug":"les-diferencies-significatives-entre-els-aliments-organics-i-no-organics","status":"publish","type":"post","link":"https:\/\/www.bioecoactual.com\/ca\/2014\/10\/16\/les-diferencies-significatives-entre-els-aliments-organics-i-no-organics\/","title":{"rendered":"Les difer\u00e8ncies significatives entre els aliments org\u00e0nics i no org\u00e0nics"},"content":{"rendered":"<p>Un equip internacional d&#8217;experts dirigit per la <strong>Newcastle University<\/strong>, Regne Unit, ha demostrat que els cultius org\u00e0nics i aliments a base de cultius org\u00e0nics s\u00f3n fins a un 60% m\u00e9s alts en una s\u00e8rie d&#8217;antioxidants clau que els cultius produ\u00efts convencionalmente.<\/p>\n<p><!--more--><\/p>\n<p>Publicat a la revista <strong>British Journal of Nutrition,<\/strong> el m\u00e9s ampli estudi d\u2019aquest tipus va trobar que el canviar a menjar fruites org\u00e0niques, verdures i cereals proporcionaria antioxidants addicionals equivalents al consum d&#8217;entre una i dues porcions m\u00e9s de fruites i verdures. Tamb\u00e9 van mostrar nivells molt m\u00e9s baixos de metalls pesats t\u00f2xics en els cultius org\u00e0nics.<\/p>\n<p>El professor de la Universitat de Newcastle Carlo Leifert, que ha dirigit l&#8217;estudi, explica: &#8220;Aquest estudi constitueix una <strong>important aportaci\u00f3<\/strong> a la informaci\u00f3 actualment disponible per als consumidors que fins ara ha estat confusa i en molts casos contradict\u00f2ria.&#8221; L&#8217;an\u00e0lisi indica que la qualitat dels aliments est\u00e0 <strong>fortament influenciada per la forma en qu\u00e8 es produeix.<\/strong> En particular, hi ha una creixent evid\u00e8ncia que a m\u00e9s alts nivells de fertilitzants qu\u00edmics fabricats, especialment el nitrogen i els fertilitzants a base de fosfats que estan <strong>prohibits o molt restringits per les normes de l&#8217;agricultura ecol\u00f2gica<\/strong>, porten a concentracions substancialment m\u00e9s baixes d&#8217;antioxidants en els cultius convencionals.<\/p>\n<p>S&#8217;ha constatat que els <strong>cultius org\u00e0nics<\/strong> i productes alimentaris a base de cultius org\u00e0nics tenen <strong>majors concentracions d&#8217;antioxidants<\/strong> (incloent \u00e0cids fen\u00f2lics, flavanonas, estilbens, flavones, flavonols i antocianines) en comparaci\u00f3 dels seus hom\u00f2legs produ\u00efts convencionalment. La difer\u00e8ncia percentual mitjana de la majoria dels compostos antioxidants est\u00e0 entre el <strong>18% i el 69%.<\/strong> M\u00e9s petites, per\u00f2 tot i aix\u00ed estad\u00edsticament significatives, tamb\u00e9 s&#8217;han detectat difer\u00e8ncies en la composici\u00f3 en diversos carotenoides i vitamines. Un canvi a menjar fruites org\u00e0niques, verdures i cereals (i aliments elaborats a partir d&#8217;aquests) conduiria a un 20-40% (i per a alguns compostos fins a un 60%) en el consum d&#8217;antioxidants poli-fen\u00f2lics provinents de cultiu sense cap augment en calories. L&#8217;augment del consum de poli -fen\u00f2lics i altres metab\u00f2lits secundaris de plantes amb activitat antioxidant protegeix contra les malalties cr\u00f2niques, incloent malalties cardiovasculars i neurodegeneratives i alguns tipus de c\u00e0ncer.<\/p>\n<p>S&#8217;han detectat <strong>concentracions m\u00e9s baixes<\/strong> d&#8217;una gamma de <strong>metalls pesats t\u00f2xics<\/strong> en cultius org\u00e0nics, en particular cadmi (de mitjana 48% m\u00e9s baix). El cadmi \u00e9s un dels tres contaminants met\u00e0l\u00b7lics t\u00f2xics juntament amb el plom i el mercuri per als quals la European Commission ha establert nivells <strong>m\u00e0xims permesos de contaminaci\u00f3<\/strong> en els aliments. Qualsevol reducci\u00f3 en el consum de cadmi \u00e9s positiva, ja que se sap que s&#8217;acumula en el cos. Les altes concentracions de nitrats i nitrits en els cultius convencionals es creu que estan relacionades amb l&#8217;\u00fas de <strong>fertilitzants de nitrogen<\/strong> mineral, que est\u00e0 estrictament prohibit <strong>per les normes de l&#8217;agricultura ecol\u00f2gica<\/strong>.<\/p>\n<p>Les concentracions de nitrit m\u00e9s altes en els cultius convencionals poden ser considerades nutricionalment indesitjables, ja que s&#8217;han descrit com a possibles factors de risc per al c\u00e0ncer d&#8217;est\u00f3mac i altres condicions.<\/p>\n<p>L&#8217;estudi ha constatat que la freq\u00fc\u00e8ncia de la pres\u00e8ncia de <strong>plaguicides detectables \u00e9s quatre vegades m\u00e9s gran en els cultius convencionals<\/strong> que en els org\u00e0nics. Les fruites conreades convencionalment tenien, amb molta difer\u00e8ncia, la major freq\u00fc\u00e8ncia de residus de plaguicides, al voltant de set vegades m\u00e9s gran que en les fruites org\u00e0niques. En els vegetals convencionals i aliments elaborats a base de cultius convencionals la freq\u00fc\u00e8ncia de residus de plaguicides va ser de tres a quatre vegades m\u00e9s gran que en la producci\u00f3 ecol\u00f2gica. Es va constatar que tots els tipus de cultius org\u00e0nics tenen similars baixos \u00edndexs de contaminaci\u00f3.<\/p>\n<p>Tot i que es necessiten m\u00e9s estudis per aclarir els beneficis per a la salut de la reducci\u00f3 de l&#8217;exposici\u00f3 a pesticides, <strong>qualsevol reducci\u00f3 es pot considerar desitjable<\/strong>, sobretot perqu\u00e8 una proporci\u00f3 significativa de les mostres dels cultius convencionals regulades per l&#8217; European Food Safety Authority (Autoritat Europea de Seguretat Aliment\u00e0ria EFSA) cont\u00e9 residus de plaguicides per sobre dels nivells permesos. En enquestes recents de l&#8217;EFSA es van trobar <strong>residus de plaguicides per sobre dels L\u00edmits M\u00e0xims de Residus<\/strong> en els espinacs, la civada, pr\u00e9ssecs, taronges, maduixes i enciam, ra\u00efm i pomes, entre d&#8217;altres.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" alignright size-full wp-image-3549\" style=\"margin: 5px 5px 5px 10px; float: right;\" src=\"https:\/\/www.bioecoactual.com\/wp-content\/uploads\/2014\/10\/study_2014_carrots.jpg\" alt=\"study 2014 carrots\" width=\"235\" height=\"150\" srcset=\"https:\/\/www.bioecoactual.com\/wp-content\/uploads\/2014\/10\/study_2014_carrots.jpg 219w, https:\/\/www.bioecoactual.com\/wp-content\/uploads\/2014\/10\/study_2014_carrots-218x140.jpg 218w\" sizes=\"auto, (max-width: 235px) 100vw, 235px\" \/>L&#8217;estudi ha identificat <strong>serioses defici\u00e8ncies en una gran part dels estudis publicats pr\u00e8viament. <\/strong>Aquests inclouen la manca d&#8217;amidaments i informes estandarditzats, i l&#8217;evid\u00e8ncia de la duplicaci\u00f3 o informaci\u00f3 selectiva de les dades obtingudes en els experiments.<\/p>\n<p><span style=\"font-size: 8pt;\">(Foto: Aliment biol\u00f2gic &#8211; aliment de confian\u00e7a) <\/span><\/p>\n<p>Els autors de l&#8217;estudi de la Universitat de Newcastle va arribar a la conclusi\u00f3 que <strong>es necessita m\u00e9s investigaci\u00f3<\/strong> per entendre la variaci\u00f3 entre estudis i que \u00e9s vital que els futurs estudis comparatius de composici\u00f3 d&#8217;aliments utilitzin protocols estandarditzats.<\/p>\n<p>Els resultats de <strong>&#8220;Majors concentracions d&#8217;antioxidants i menors de cadmi i menor incid\u00e8ncia dels residus de plaguicides en cultius org\u00e0nics: una revisi\u00f3 bibliogr\u00e0fica sistem\u00e0tica i metan\u00e0lisi&#8221;<\/strong> contradiu les de l&#8217;estudi encarregat el 2009 per la UK Food Standards Agency (Ag\u00e8ncia de Normes Aliment\u00e0ries FSA) que va trobar que no hi havia difer\u00e8ncies substancials ni beneficis nutricionals significatius en els aliments org\u00e0nics.
