S&#8217;origina sobretot en els fregits, el rostit, el brasejat, el torrat i tamb\u00e9 en alguns altres processos industrials. Es forma principalment a partir dels sucres del mid\u00f3 i d&#8217;alguns amino\u00e0cids com a conseq\u00fc\u00e8ncia de la coneguda i apreciada reacci\u00f3 de Maillard, que torra i enfosqueix els aliments, modificant el seu sabor i fent-los m\u00e9s atractius al paladar. Quan aquest enfosquiment \u00e9s de color &#8220;daurat&#8221; no hi ha risc pel que fa a la pres\u00e8ncia d&#8217;acrilamida, per\u00f2, quan aquest torrat \u00e9s m\u00e9s fosc (entre marr\u00f3 i negre), s\u00ed que \u00e9s perill\u00f3s i hem d&#8217;evitar menjar-lo. Aix\u00f2 \u00e9s aplicable a les empreses i a casa <strong>quan saltem verdures o fregim certs aliments, com patates, arrebossats o tempures, sempre s&#8217;ha de procurar no passar del daurat.<\/strong><\/p>\n<blockquote><p>Tant l&#8217;acrilamida com el seu metab\u00f2lit, la glicidamida, s\u00f3n genot\u00f2xiques i cancer\u00edgenes, i tamb\u00e9 provoquen alteracions importants en el sistema nervi\u00f3s.<\/p><\/blockquote>\n<p>Al consumir aliments amb acrilamida aquesta s&#8217;absorbeix en el tracte gastrointestinal i d&#8217;all\u00ed es distribueix per l&#8217;organisme i es metabolitza. D&#8217;aquest proc\u00e9s de metabolitzaci\u00f3 es produeixen subst\u00e0ncies com la glicidamida que, segons els estudis avaluats per l&#8217;Autoritat Europea de Seguretat Aliment\u00e0ria (EFSA) t\u00e9 un potencial t\u00f2xic important tamb\u00e9. Tant l&#8217;acrilamida com el seu metab\u00f2lit, la glicidamida, s\u00f3n genot\u00f2xiques i cancer\u00edgenes, i tamb\u00e9 provoquen alteracions importants en el sistema nervi\u00f3s. Per aix\u00f2, no es poden establir dosi d&#8217;ingesta di\u00e0ria tolerables d&#8217;acrilamida i s&#8217;estableixen l\u00edmits m\u00e0xims en determinats productes industrials.<\/p>\n<h3>Quins aliments contribueixen m\u00e9s a la ingesta d&#8217;acrilamida?<\/h3>\n<p>Aix\u00f2 dep\u00e8n de l&#8217;edat i dels h\u00e0bits alimentaris de les persones, per\u00f2 en general se sap que els productes que m\u00e9s aporten d&#8217;aquest t\u00f2xic a les nostres dietes s\u00f3n:<\/p>\n<ul>\n<li>En adults: les patates fregides i patates rostides, el caf\u00e8 i productes com el pa, les galetes, les galetes salades i el pa tipus biscotes.<\/li>\n<li>En nens de m\u00e9s d&#8217;1 any i adolescents: sobretot els productes derivats de les patates fregides i tamb\u00e9 el pa, els cereals d&#8217;esmorzar, les galetes, els productes de fleca i pastisseria, snacks, aperitius i els aliments processats a base de cereals per a nadons.<\/li>\n<li>En nadons de menys d&#8217;1 any: els aliments per a nadons que no s\u00f3n elaborats a base de cereals, els que han estat elaborats a base de cereals (sobretot biscotes i galetes) i altres productes derivats de les patates.<\/li>\n<\/ul>\n<blockquote><p>Quan saltem verdures o fregim certs aliments, com patates, arrebossats o tempures, sempre s&#8217;ha de procurar no passar del daurat<\/p><\/blockquote>\n<p>Les empreses aliment\u00e0ries han de controlar els seus processos per minimitzar la formaci\u00f3 d&#8217;acrilamida, sent en aquest sentit important el Reglament (UE) 2017\/2158 de la Comissi\u00f3 Europea (1), amb el qual queden definides les mesures de mitigaci\u00f3, obligat\u00f2ries per a la ind\u00fastria i tamb\u00e9 empreses de c\u00e0tering i restauraci\u00f3, i els nivells de refer\u00e8ncia per a reduir la pres\u00e8ncia d&#8217;acrilamida en els aliments. Els productes per als quals s&#8217;han d&#8217;aplicar mesures de control s\u00f3n:<\/p>\n<ul>\n<li>Patates fregides, altres productes tallats fregits i patates fregides a l&#8217;anglesa (xips) fabricades amb patates fresques.<\/li>\n<li>Patates fregides a l&#8217;anglesa (xips), productes d&#8217;aperitiu, galetes salades i altres productes a base de massa de patates.<\/li>\n<li>Pa.<\/li>\n<li>Cereals per esmorzar (a excepci\u00f3 del porridge).<\/li>\n<li>Productes de brioixeria, pastisseria, rebosteria i galeteria; galetes, biscotes, barretes de cereals, scones, cucurutxos.<\/li>\n<li>Neules, panets de llevat i pa d&#8217;esp\u00e8cies, aix\u00ed com galetes salades, pans cruixents i succedanis de pa. (En aquesta categoria, una galeta salada \u00e9s una galeta seca (un producte enfornat a base de farina de cereals).<\/li>\n<li>Caf\u00e8: caf\u00e8 torrat, caf\u00e8 instantani (soluble), succedanis de caf\u00e8.<\/li>\n<li>Aliments infantils i aliments elaborats a base de cereals destinats a lactants i nens de curta edat.<\/li>\n<\/ul>\n<p>I les mesures de reducci\u00f3 de la formaci\u00f3 d&#8217;acrilamida s\u00f3n procediments basats en els coneixements cient\u00edfics i t\u00e8cnics actuals, que s&#8217;han d&#8217;aplicar en la producci\u00f3 d&#8217;aliments a nivell industrial o en restauraci\u00f3 per mantenir els valors d&#8217;acrilamida per sota dels nivells de refer\u00e8ncia establerts.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-38074 aligncenter\" src=\"https:\/\/www.bioecoactual.com\/wp-content\/uploads\/2020\/07\/Elementos-t\u00f3xicos-en-los-procesos-alimentarios_2-1.jpg\" alt=\"Elementos t\u00f3xicos en los procesos alimentarios: acrilamida\" width=\"1200\" height=\"568\" srcset=\"https:\/\/www.bioecoactual.com\/wp-content\/uploads\/2020\/07\/Elementos-t\u00f3xicos-en-los-procesos-alimentarios_2-1.jpg 1200w, https:\/\/www.bioecoactual.com\/wp-content\/uploads\/2020\/07\/Elementos-t\u00f3xicos-en-los-procesos-alimentarios_2-1-768x364.jpg 768w, https:\/\/www.bioecoactual.com\/wp-content\/uploads\/2020\/07\/Elementos-t\u00f3xicos-en-los-procesos-alimentarios_2-1-696x329.jpg 696w, https:\/\/www.bioecoactual.com\/wp-content\/uploads\/2020\/07\/Elementos-t\u00f3xicos-en-los-procesos-alimentarios_2-1-1068x506.jpg 1068w, https:\/\/www.bioecoactual.com\/wp-content\/uploads\/2020\/07\/Elementos-t\u00f3xicos-en-los-procesos-alimentarios_2-1-887x420.jpg 887w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/p>\n<p><strong>Quines mesures s&#8217;han de tenir en compte, per exemple, en les patates?<\/strong><\/p>\n<ul>\n<li>Selecci\u00f3 de mat\u00e8ries primeres: Les patates han de seleccionar-se sense brots ni parts verdes i que no siguin molt petites perqu\u00e8 acumulen m\u00e9s sucres reductors susceptibles de generar acrilamida.<\/li>\n<li>Emmagatzematge i control: Conservar fora de la nevera, en lloc sec i fosc per evitar la germinaci\u00f3.<\/li>\n<li>Disseny de receptes i processos: Triar talls gruixuts, rentar-les i assecar-les b\u00e9 abans de fregir per evitar fregits llargs.<\/li>\n<li>Processament: Reduir el temps i temperatura de fregit i retirar-les amb un color daurat. Les parts m\u00e9s fosques o cremades, contenen major quantitat per la qual cosa cal evitar consumir-les.<\/li>\n<li>Valorar altres alternatives culin\u00e0ries o de processament com la cocci\u00f3, el cuinat a el vapor o al microones on no es genera acrilamida.<\/li>\n<\/ul>\n<p>L&#8217;objectiu de totes les mesures que s&#8217;apliquen en la ind\u00fastria aliment\u00e0ria i que tamb\u00e9 s&#8217;haurien d&#8217;aplicar a casa \u00e9s disminuir l&#8217;exposici\u00f3 global d&#8217;acrilamida mitjan\u00e7ant la nostra dieta.
