La Vida Vegan <\/strong>introduces its new organic Matcha Spread, expanding its range of organic chocolate spreads in response to the growing popularity of matcha. The new product brings matcha into the spreads category and is already available through multiple retail listings. Today, we are putting it to the test with a truly irresistible recipe: pistachio white chocolate cookies with a creamy matcha filling.

Ingredients (16 cookies)<\/span><\/h2>\n

  • 150 g margarine (or butter, at room temperature).<\/li>\n
  • 100 g light brown sugar.<\/li>\n
  • 50 g granulated sugar.<\/li>\n
  • 2 eggs or egg substitute.<\/li>\n
  • 300 g flour.<\/li>\n
  • 1 tbsp cornstarch.<\/li>\n
  • 1 tsp baking powder.<\/li>\n
  • \u00bd tsp baking soda.<\/li>\n
  • 100 g unsalted pistachios.<\/li>\n
  • 100 g white chocolate roughly chopped.<\/li>\n
  • 1 jar La Vida Vegan matcha spread.<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<\/div>\n

    Instructions<\/h3>\n

    1. Preheat the oven to 210\u00b0C and line a baking tray with parchment paper.<\/li>\n
    2. Mix the margarine with the light brown sugar and granulated sugar until light and fluffy.<\/li>\n
    3. Add the eggs one at a time and mix well.<\/li>\n
    4. Finely grind half of the pistachios.<\/li>\n
    5. In a separate bowl, mix the flour, cornstarch, baking powder, baking soda, and ground pistachios.<\/li>\n
    6. Add the dry ingredients to the wet mixture and mix into a firm dough.<\/li>\n
    7. Fold in the white chocolate and the roughly chopped pistachios.<\/li>\n
    8. Use an ice cream scoop to portion equal balls of dough and place them on the baking tray, leaving enough space between them.<\/li>\n
    9. Gently flatten the dough balls.<\/li>\n
    10. Make a small well in the center and add a spoonful of La Vida Vegan matcha spread.<\/li>\n
    11. Cover with a second layer of dough and seal lightly.<\/li>\n
    12. Bake the cookies for \u00b110 minutes at 180\u00b0C, until the edges are golden brown while the centers remain soft.<\/li>\n<\/ol>\n
